Course description:

The course will deal with the vitamins and minerals which are essential for health throughout the life span. This course examines the metabolism of vitamins and minerals in the context of human development, aging and with emphasis on disease prevention and pathogenesis. 
The function and role of vitamins and minerals will be discussed in the following concerns and during reproduction, aging, growth and development, including cognitive development (emphasis on infancy, early childhood and aging), oral health, hypertension, antioxidants and chronic disease, bone health (emphasis on infancy and aging).

Course Aims:

  • To learn the state of art of vitamins and minerals and their role in human nutrition.
  • To provide an understanding of the classification of individual substance for each vitamin and mineral.
  • Cleary aware of functions, bioavailability and absorption of vitamins and minerals.
  • knowing sources of the vitamins & minerals.
  • Analyze principles establishing dietary guidelines for vitamins& minerals intake in Palestine.
  • Recognize and diagnose vitamins & minerals deficiencies .
  • Being aware of health risks from excessive vitamins & minerals intake .
  • Be able to recommend vitamins intake through life cycle and for special groups.

Course outcomes:

  • To examine the basis of the interactions with food and medicines.
  • To familiarize himself with common healthy diets.
  • Knowing the recent assay methods.
  • Critically describe, evaluate of recently published scientific data on vitamins and minerals.
  • Being in the same boat with the advances in research on vitamins and minerals (new trends in research). 
  • To provide an understanding of vitamins and minerals supplementation and fortification.
  • Be able to make individual presentation.
