Principles of Dietetics NUTR 2209

Course description:

This course focuses on the principles of dietetics, the general terms and definitions, meanwhile, the course will deal with the current nutritional issues in Palestine like obesity, underweight and NCDs and the role of diet in preventing their consequences (Mediterranean diet and DASH) concentrate on the disturbances and diseases arises from using certain food and drinks and how to manage that. 
The course also aims to define the types of diets and their uses and how to differentiate between appropriate and inappropriate diets for each patient according to his/her needs.  Knowing the best way to use supplements, complementary and special foods to meet the nutritional shortage and starvations. The course also designed to show how to prepare a scientific based diet for patients suffering from obesity, underweight, DMT2, hypertension, etc.

Course Aims:

  • Describe the basic concepts of diet.
  • Evaluate patients / clients response to nutritional care and modify accordingly.
  • Apply the knowledge, skills and attitudes learned in a clinical setting.

Course outcomes:

Upon completion of this course, the student should be able to:
  • Recognize special dietary needs for patients and clients with different disorders and use the appropriate nutritional care to manage them.
  • Know the food pyramid and food group classifications and food substitutes and how to conduct nutritional and dietary orientation for patients/clients.
  • Developing a scientific understanding for using dietary standard and reference to prepare diets for person/ family/ groups in both normal and abnormal situations.
